HCG Diet Shrimp Salad

This is a delicious recipe for HCG diet shrimp made cocktail style, and it is very easy to prepare and make and it happens to be very low in calories. It's a perfect recipe for a meal or an appetizer during Phase 2 of the diet, and you can increase the servings of this recipe fairly easily. All of the seasonings for this recipe are approved for the HCG diet, but you can add your HCG approved seasonings as preferred.

Included in this recipe is a second recipe HCG diet cocktail sauce which goes perfectly with several different recipes on the HCG diet, especially shrimp recipes as well as seafood. The recipe below is for 4 servings but you can feel free to scale it up or down as needed. Cut one lemon into quarters to make it easy to divvy up the lemon juice for this recipe.

Shrimp and salad ingredients:

  • 14 ounces of large shrimp, deveined and peeled
  • 1 tsp. sea salt
  • 4 cups romaine lettuce, shredded
  • 8 tbsp. HCG diet cocktail sauce (see recipe below)
  • 2 tbsp. Old Bay seasoning
  • 3/4 lemon, juiced
  • Salt and pepper to taste

Cocktail sauce ingredients:

  • 3 ¼ ounces of tomato paste (no sugar added)
  • 1 tsp. hot sauce
  • 1 tbsp. apple cider vinegar
  • 2 tbsp. lemon juice
  • ¼ tsp. horseradish
  • 1/8 tsp. mustard powder
  • Salt and pepper to taste

Directions:

  • Mix ingredients for cocktail sauce in a bowl. Add water to achieve desired consistency.
  • Bring a large pot of water to boil and add salt.
  • Add Old Bay seasoning and add shrimp.
  • Cook for 6-7 minutes until shrimp are opaque.
  • Remove shrimp and transfer to a bowl with ice.
  • Allow to cook about 15 minutes.
  • Add romaine lettuce to a bowl and season with lemon juice, salt, and pepper to taste.
  • Add ¼ portion of shrimp to each bowl.
  • Season one last time with salt and pepper, add cocktail sauce and serve.
