Mini Eggplant Pizzas for Ph3
- One medium-large sized eggplant
- Low sugar tomato sauce (or you can opt. for organic crushed tomatoes and season yourself).
- 1-2 cups low fat mozzarella cheese
- Preferred pizza toppings: we chose sliced olives, sliced turkey pepperoni, and fresh basil leaves
Preheat oven to 400 ° F.
Cut eggplant into round slices around 3/8" thick.
(You may choose to peel the eggplant or leave the skin intact).
Place eggplant slices on a baking sheet, and layer chosen ingredients as desired.
Bake 20-25 minutes.
